Tongba: Everything About Nepal’s Traditional Millet Beer

If you travel to eastern Nepal or the hills during cold weather, you will often see locals holding a tall wooden mug with a metal straw. Inside it sits a warm, fermented drink called Tongba.

Tongba is not just alcohol. It is culture, tradition, and community in a cup.

For many Nepalis, especially in Limbu and Rai communities, tongba is a daily ritual.

What Is Tongba?

Tongba is a traditional millet beer from Nepal made from fermented millet grains. Instead of pouring it like normal beer, hot water is added to the grains. The drink is then sipped slowly through a bamboo or metal straw.

As a result, the flavor stays warm, mild, and slightly sour. Unlike bottled alcohol, tongba feels natural and homemade.

Where Does Tongba Come From?

Tongba comes mainly from eastern Nepal, especially Ilam, Dhankuta, Taplejung, Panchthar, Limbuwan region. It is deeply connected to Limbu and Rai indigenous communities. However, today you can find tongba in teahouses and local restaurants across Nepal.

How Tongba Is Made

The process is simple but traditional. Families often prepare it at home.

Here’s how it’s usually made:

  1. Millet is cooked and dried
  2. A local yeast starter (marcha) is mixed in
  3. The mixture ferments for several days
  4. Fermented grains are stored and ready to serve

When serving, hot water is poured into the container. The grains release flavor slowly. Because of this method, tongba can be refilled 2–3 times.

How to Drink Tongba (The Right Way)

Drinking tongba is different from drinking beer or raksi. There’s a small ritual.

Follow these steps:

  • Pour hot water into the wooden mug
  • Wait 2–3 minutes
  • Sip slowly through the straw
  • Refill with hot water when finished

The metal or bamboo straw often has tiny holes. These holes filter the grains. As a result, you only drink the liquid.

What Does Tongba Taste Like?

Tongba has a mild and earthy taste.

Most people describe it as:

  • Slightly sour
  • Warm and comforting
  • Lightly alcoholic
  • Less bitter than beer

It feels closer to kombucha or warm cider than modern beer.

Therefore, even first-time drinkers usually enjoy it.

When Do Locals Drink Tongba?

Tongba is especially popular during:

  • Cold winter evenings
  • Festivals and gatherings
  • Village meetings
  • After farm work
  • Trekking rest stops

Because it warms the body, many people treat it like comfort food. In the hills, tongba replaces tea or coffee.

Tips for First-Time Drinkers

If you want to try tongba safely and respectfully:

  • Drink slowly (it’s stronger than it feels)
  • Share with locals if invited
  • Don’t shake or stir aggressively
  • Use the straw gently
  • Avoid drinking on an empty stomach

Is Tongba Strong?

Tongba usually contains 5–8% alcohol, depending on fermentation. However, because you sip slowly, the effect feels lighter. Still, after several refills, it can be strong.

So pace yourself.

Why Tongba Is More Than a Drink

Tongba is not just millet beer. It represents indigenous culture, local farming traditions, community bonding and slow living. Unlike commercial alcohol, it is handmade and shared.

That is what makes it special.
